Sometimes you just need some comfort food and for me that is this keto taco ground beef casserole that I made in the slow cooker. It full of spicy ground beef and a cheesy sauce that you can dress up any way you would a taco.
This is one of those meals that you can eat as is for a keto dinner or you could add rice to tortilla chips if you are not watching carbs. I topped mine with lettuce, sour cream and cilantro and it was yummy! Each serving of this taco casserole has 5.7g net carbs.
Keto Taco Ground Beef Casserole
Recipe in a Nutshell
- First mix the spices together and use half to brown the ground beef in a skillet.
- Spray the crock of your slow cooker and then layer the vegetables, cream cheese, cheddar, sauce, the rest of the spices, ground beef and more cheddar.
- Cover and cook on high for 4 hours or low for 8 hours stirring half way.

Keto Taco Ground Beef Casserole Ingredients
For this taco ground beef casserole I used ground beef, lots of spices, cauliflower, peppers, cream cheese, cheddar cheese and pasta sauce . I used a lot of cauliflower and this was to give it bulk with out the carbs. Also cauliflower has a very neutral flavor and takes on the Mexican spices nicely.
The cream cheese and cheddar cheese make a nice queso type sauce when mixed with pasta sauce and Mexican spices. I used Aldi Specialty Selects Marinara sauce because it only has 8g net carbs in 1 cup.
You could always substitute jar salsa if you have it and 1 cup of salsa is equal or less than 8g net carbs. I didn't have any on hand so I use the marinara and with the spices it was great.
Let's Make This Taco Casserole
First thing you want to do is mix all the spices together . This is a bit spicy but it's not hot spicy. Next you brown the ground beef in a skillet along with half of the spices.
Once that is done the rest is easy. Above you can see the steps. The bottom layer is the raw chopped vegetables then scatter the chunks of cream cheese. Next top that with 1/2 of the cheddar cheese and marinara sauce that has been mixed with the other half of the spices. Lastly pour the ground beef into the crock and sprinkle the rest of the cheddar.
You can cook this on high for 4 hours or low for 8 hours . This will depend on how your slow cooker works. However make sure to mix the casserole together before serving. You want the sauce to cover all the vegetables and meat.

- This recipe uses a lot of spices but is not hot spicy. You can use less of the spice mix if you wish but it might take away from the flavor.
- When you brown the meat you just want to get it cooked but not over done. So just as it's changing from pink to brown it should be done.
- Layer the casserole with the vegetables on the bottom since they are raw.
- Also make sure to mix the casserole before serving so the cheesy sauce combines with everything.
- The timing on the casserole may vary depending on your slow cooker. But since the meat is cooked it might not take as long as most slow cooker recipes.

Ingredients
- 1 lb ground beef
- 1 cup bell peppers, diced
- 3 cups cauliflower, chopped
- 4 oz cream cheese, cut into pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1 1/2 teaspoons cayenne powder (optional)
- 1 cup low carb marinara sauce
- 1 1/2 cups shredded cheddar cheese
Instructions
- Mix together all of the spices and set aside.
- In a large skillet, brown the ground beef with half of the spices.
- Mix the rest of the spices with the marinara sauce.
- Spray the crock of the slow cooker with cooking spray and then add in the chopped cauliflower and peppers.
- Sprinkle 1/2 of the cheddar cheese and cream cheese.
- Next add the sauce and then the browned ground beef.
- Sprinkle the remaining cheddar and cook for 4 hours on high or 6-8 on low.
- Mix the casserole well before serving.
- Note times may be different depnding on the type of slow cooker you are using. Because the meat is already cooked and all you really need to cook are the veggies, it might cook quicker than most slow cooker meals. See Notes below for more tips.
