Crockpot/slow cooker cooking is the best for a few reasons:
Why we love our slow cooker:
- SO simple: Your crockpot does all the work of cooking your meal. Many crockpot meals are simply dump + turn the crockpot on!
- Minimal prep time – Because the crockpot cooks low and slow for hours, you don't need to spend time standing by the stove!
- Can be made ahead for busy nights – Sometimes I will prep all the ingredients and place in the base of my crockpot in the refrigerator overnight. In the morning, simply put the base in your crockpot insert, turn on, and you're done!
- It cooks dinner FOR you! Need I say more? Who doesn't want to come home from work to have dinner already done and waiting for you? It's kinda my favorite thing.

Are slow cookers bad for your health?
No! Slow cookers are totally find for your health. If possible avoid a crockpot with an aluminum base or nonstick coating.
Can I put frozen chicken in the crockpot?
You shouldn't put frozen chicken in the crockpot. It's a food safety issue and likely will not cook correctly. For best results, thaw your chicken thoroughly before cooking in the crockpot.
Is cooking in slow cooker healthy?
Yes! Cooking in a slow cooker is totally healthy and good for you.

- 2 tablespoons olive oil
- 1 lb. chicken breasts about 2 larger breasts
- 1 cup celery 1 inch pieces
- 1 cup carrot 1 inch pieces
- 1 cup onion finely chopped
- 1/2 tablespoon garlic finely minced
- 2 cups yukon gold potatoes peeled+ cut into 1 inch pieces
- 1 cup yukon gold potatoes peeled+ cut into quarters so that you can remove them at the end
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 3 cups chicken broth or bone broth- low sodium!
- 3 tablespoons parsley for garnish
- 1/2 cup almond milk or milk/ other dairy free milk

Heat olive oil in a pan on the stove. Add in the celery, carrot, onion, garlic, salt and pepper. Sauté for 2 minutes or until slightly translucent. (This step is optional, but recommended!)

Layer raw chicken, cooked vegetables, and potatoes in the crockpot. Add broth. Cover + set to low for 6 hours.

Once cooked, remove the large potato pieces + chicken breasts.

Place large potato quarters, almond milk + 1/2 cup of broth *from the pot* (a few ladels full!) into a blender until smooth. Add back into the pot.

Place chicken breasts on a cutting board and shred. Put the chicken back into the pot.

Stir everything together until combined and smooth. Garnish with parsley and serve.
